How many episodes the 3rd season will have has not yet been announced. The first season of the series still had 10 episodes. The upcoming 2nd season, however, will only have 8 episodes.
Vice President of HBO Programming, Franscesca Orsi, explained the renewal (via The Hollywood Reporter ):
[Co-creators] Geroge [R.R. Martin], Ryan [Condal] and the rest of our incredible executive producers, cast, crew, have reached new heights with the phenomenal second season of House of the Dragon.
